Details

The polkit authentication agent is a session-specific thing. Users have to ensure that it's available in their X session. Cinnamon, GNOME and KDE users are already have one, and lightweight DE users could choose one of the available implementations, but they have to ensure that the agent is autostarted with their session.[1]

Therefore polkit-gnome is not directly related to Thunar, please remove it from optdepends.

I'd rather vote for the other's being added than gnome-polkit being removed, or somehow giving the user a link to the wiki where they can choose which one they want.
