According to one of the maintainers, nextcloud supports symlinks fine; But the update process removes a symlink for the nextcloud data directory.

Symlinking pacman controlled dirs is unsupported. Bind mounts are the best solution. Searching will find plenty of occurrences of this over the years e.g:
