pass `-DHIREDIS_FROM_INTERNET=OFF` to cmake to avoid download hiredis from internet.

0x0000000000000001 (NEEDED) Shared library: [libhiredis.so.1.1.0]

hiredis is *NOT* optional from a pacman POV. It's either supported or it's not. Are you requesting support for hiredis be dropped?
