This task depends upon
log
"Unable to find deploy-hook command service in the PATH."
That means you have some config somewhere (/etc/letsencrypt/* ?) where I think it's trying to execute a hook script named "service" which is derived from your config somehow. Sorry, but this looks like a misconfiguration issue which you'll need to debug yourself and/or seek help through the forum, IRC, etc. It certainly doesn't look like an Arch packaging problem at this stage, but feel free to request task reopen if more info comes to light.
