There might be a small misunderstanding here. Previously, gst-plugin-pipewire was a hard dep, but this changed here [1] to make screencasting optional. This was on purpose [2]. In other words, if you need screencasting (screen recording) functionality, you are meant to install the optional deps that mention "screen recording" i.e. gst-plugin-pipewire and gst-plugins-good. Hope that helps.
