After updating my home-server, this device disappeared.
JMicron Technology Corp. / JMicron USA Technology Corp. JMS567 SATA
i downgreaded linux and linux-headers to an older version and it re-appeared.

There is a large range of kernel versions across 5.4.12 and 5.10.14. If it were me I would try and track it down to a sequential version bump.
For example: "5.9.2 was working fine, while 5.9.3 broke it" or "all 5.8 kernels were ok, while 5.9 regressed".

For this, one can use the archive [1] to fetch and check kernels.

In addition to this might be nice to compare the output of dmesg and as well as lsmod - across good/bad kernel.
Former ought to high-light if the kernel module is having issues loading/working, while the latter if the module is loaded (build toggle might have been switched off).
