Downgrading only gnome-shell to 3.36.0+35+gd9a75412c resolves the issue

Issue not confined only to appindicator menus - can also be seen in Arc Menu extension

Possibly related to upstream gnome-shell commit c89d6a633aa431adda8080665e38d957146c5357, st/icon: Add a default fallback icon

Looks to be fixed by upstream commit 7ff7fb5d3b3ee655b1492226f68aeadac846e247, st/icon: Only load default fallback icon if an icon was set and failed to load
