Description:
I'm using breeze-dark icons with a dark UI theme but it seems like LibreOffice is using breeze icons in the UI making it very difficult to understand.

This doesn't seem to be an packaging issue, but either an issue with your GTK settings or an upstream problem.
Are the icons in the UI the same when you change your KDE Theme?

yes the icons remain same when I change the global theme. I just tested with Breeze and Oxygen themes, as they are light and the icons are dark it looks as expected but when a dark theme is applied the icons and some text become difficult to understand.

LibreOffice doesn't seem capable of detecting the dark icon theme.
Open Options > LibreOffice > View and set "Icon style" to "Breeze (dark)".
