Description:

wayland-protocols is only used by wayland-scanner to generate C files at build-time, it doesn’t have any reason to be installed alongside gtk3.

Steps to reproduce:
1. install gtk, and
2. manually remove any wayland-protocols files, or
ensure gtk3 PKGBUILD has wayland-protocols as makedep + remove wayland-protocols package
3. everything gtk3 works like a charm

gtk3 references wayland-protocols from the .pc files. Removing it from depends means lots of packages will fail to build (every package depending on gtk3 will need wayland-protocols added to makedepends).
Though not a runtime dependency, we keep the dependency, we do the same with all the libs that depend on xorgproto, which isn't a runtime dependency either.
