Description:
Under system-wide coding UTF-8, entering an umlaut by keyboard results in its (2) UTF-8 part characters. libreoffice-fresh-5.2.5-1 works flawlessly, config unchanged.

Works for me. Maybe backup your local config folger and let it create a new one with default settings.

I had been using 5.2.5-1 recently and there was no problem like that.
I have removed the old config now and tried 5.3.0 again, but to no avail.
I have reset all my LC_ settings to en_US.UTF-8, but that didn't change anything either.
Actually, there are no problems with documents already containing umlauts, but only when I enter them by keyboard.

I have downloaded the binary libreoffice 5.3.0.3 from libreoffice.org and unpacked it to the Arch Linux tree, after having uninstalled the Arch Linux variant.
That version does not reproduce the problem.
