.desktop files with 'Version=1.0' don't show up in gnome menu under 'Applications'. Many packages are affected I think.
To reproduce, install Shadowhand's http://arch.os-zen.net/pkg/shadowhand/gimp-devel-2.3.9-1.pkg.tar.gz
It won't show up in gnome menu until you edit '/usr/share/applications/gimp.desktop' and remove the 'Version=1.0' line.
Note: the gimp package is just an example. I have seen this in some packages in current/extra.

I guess something must be wrong with your system, grepping through /usr/share/applications brings up several apps: gimp, openoffice, gvim, hplip... all of them show up in my menu.

Yes, gimp, openoffice and hplip show here too.
But for some reason, some packages only show up when 'Version=1.0' is removed.

gimp 2.11 shows up correctly but both gimp-devel 2.3.9 and gnome-cups-manager do not.

Run a desktop-file-validate over these .desktop files, the tool should come up with something in that case.

I run 'desktop-file-validate' over gnome cups manager .desktop file in 'community' repository and the output was:

warning: boolean key "Terminal" has value "0", boolean values should be "false" or "true", although "0" and "1" are allowed in this field for backwards compatibility

In the case of gnome-cups-manager: it has gftp listed in TryExec, so unless you install gftp, gnome-cups-manager won't show up in gnome menus.
