Installing libinfinity (to host a gobby server) requires gtk2 which in turn pulls in other X-dependencies one does not need on a server.
The official compiling instructions say that gtk2 is optional: http://infinote.0x539.de/libinfinity/API/libinfinity-0.6/custom-compiling.html

Is there any reason gtk2 is listed as a required dependency?

$ pacman -Si libinfinity
