uhh forgot to say
just changing from --enable-gui=gtk to --enable-gui=gtk2 should do.

I built the package against gtk2, but saw some strange font issues immediately. Some blocks of text would not display in gvim afterwards.

It may just be a settings thing on my end, but I can't release an updated gvim til I see all my text. :)

hmm how about adding a gui default font on /etc/vimrc ?
here is mine:
set guifont=Bitstream\ Vera\ Sans\ Mono\ 11

just dont use that set cause it needs bitstream Vera fonts, or use it and put in the dependency, its the best result you will get with archs fonts :-)

You're right, it was just my font settings. I'll update gvim today.
