Upstream code comes with a template that's technically the same but provides a large number of translations of keys Name, Generic Name and Comment.
During the regular build procedure as applied by PKGBUILD it gets sourced and pavucontrol.desktop is placed in $XDG_DATA_DIRS/applications automatically.
Thus I think that custom one should be dropped.

Notes:
Building 2.0 on up-to-date Arch Linux using recent ABS checkout yields a binary that segfaults right on start. Problem can't be seen with recent Git code. For this and some more reasons I asked upstream about a new release which hasn't been answered yet (http://lists.freedesktop.org/archives/pulseaudio-discuss/2015-March/023369.html).
Also, the local path is erroneously included in one section of doc/README. Problem affects recent Git code as well. A patch is pending fixing it only in Git code, though (http://lists.freedesktop.org/archives/pulseaudio-discuss/2015-March/023368.html).
Both findings the same on i686 and x86_64.
