Details
I'm directly booting the kernel via EFISTUB, which works
fine, but every kernel update needs some manual copying of
files. It would be great, if kernel and initrd could not
only be put to the fixed /boot location, but also with
different names (kernel needs to have “.efi” suffix) to
another location like “/boot/EFI/Arch”.

mkinitcpio isn't going to do anything with your kernel.
