I'm directly booting the kernel via EFISTUB, which works fine, but every kernel update needs some manual copying of files. It would be great, if kernel and initrd could not only be put to the fixed /boot location, but also with different names (kernel needs to have “.efi” suffix) to another location like “/boot/EFI/Arch”.

Additional comments about closing:  If you need to copy files manually after updating, your setup is clearly wrong.

Not sure what you want mkinitcpio to do here that it won't do already -- modify the preset if you want the initramfs image going to some other location than what it's currently set it.
mkinitcpio isn't going to do anything with your kernel.
