Like what other gtk packages? Very, very few of them in the main repos are built against both. If you want a GTK2 version, you would normally make it yourself and add it to the AUR.

I'm generally against adding both variants. GTK3 is the preferred toolkit, GTK2 only receives security updates. Closing.
