It wouldn't be added at all if it isn't required. I'm going to rebuild LO with --disable-gstreamer-0-10 flag soon.

Shouldn't all packages be built in fresh clean chroots anyway? there is no need to force disable it. just don't install gstreamer0.10 in the chroot.

Why do you even need gstreamer0.10 when libreoffice can be built with gstreamer 1.0?
