Details

The package is missing the `bluetooth-applet` binary. I can use it to pair my device, but that's about it, since I can't start the applet.

It was an upstream decision:

But the bluetooth-applet code is still maintained in a separated project, so you can install it from AUR:

Ok, added a line in the wiki indicating that this is the case. Just out of curiosity, how does one use gnome-bluetooth without the applet?

It can be used with gnome-control-center. It has a Bluetooth panel.

It seems the bluetooth-panel-applet git repository is gone and the applet had been put back into the newest version of gnome-bluetooth on git.
