Hi. Thanks for reporting. As far as I can tell, this is a problem with geary itself. Please report this upstream to the geary developers and add a comment with the link to the ticket. Thanks.

important progress: if I launch Geary with /usr/bin/geary, it works!

Your PATH is wrong, here's what it should look like: /usr/local/bin:/usr/local/sbin:/usr/bin:/usr/bin/vendor_perl:/usr/bin/core_perl
You have probably messed up somewhere during the /bin and /sbin move. Please make sure /bin and /sbin are symlinks to /usr/bin, if not install filesystem properly, and if you can't find the source of the problem, just "sed -i 's|Exec=geary|Exec=/usr/bin/geary|g' /usr/share/applications/geary.desktop".
I'll be closing the task then since problem is on your end, not ours.
