We've already changed who we mirror from and have changed the access methods, removing the ftpfull at the end. We have set up a 301 redirect from /archlinux/ftpfull to /archlinux for now.

Also, is it worth it, keeping the 301 redirect?

You can remove the redirect. Users will get the new URL when the pacman-mirrorlist package is updated.
