Details

Not having a /opt/gnome/bin/evolution -> /opt/gnome/bin/evolution-2.4 symlink means that gnome-default-applications-properties doesn't detect Evolution on the system.

Will fix this one in the weekend with a nice evolution-2.4 -> evolution symlink for both the executable as the .desktop file.
