The i8kmon utility has the following flags:

-d|--daemon run in daemon mode without user interface
-nd|--nodaemon don' run as daemon, open the user interface

The only difference between the two is that -nd starts a Tk GUI and -d doesn't start the GUI. There are no options which make i8kmon fork. So, the service should be:

ExecStart=/usr/bin/i8kmon -d

The Type should be the default of simple, but explicitly adding Type=simple might be useful.
