The latest FlightGear-data package includes every aircraft that can be found on the Flightgear website. A lot of those models are in early alfa or just don't work and thus are not really usable in the simulator. Including all those models takes up a lot of disk space. Total install size for me was around 5.3GB. The folder containing the aircraft models takes up around 4GB. Previous versions of FlightGear only included the standard models, which resulted in far less disk usage and download size. Additional models can always be downloaded from the website.
