Description:

Recently (I believe 1.7.1), conky was built against lua on an un-clean system; there was an opened bug and resulting fix for 1.7.1.1, which was shortly released by the conky project. Rather than observe the new dependency, it seems that lua was simply added as a new dependency for conky.

It seems this dependency is very useless for the majority of users. Conky does accept a "--disable-lua" configure option which might be nice to keep the dependency chain down to what most people actually use.

What's wrong with Lua dependency?
It's a small package and allows extending conky with your own scripts, look at Awesome WM for examples of exteding functionality with Lua scripts.
And BTW I bet that if Lua support will be removed someone will file a feature request asking conky to be compiled with Lua support. ;-)
